Olive Oil Gingerbread



2 cups all purpose flour

3 tsp baking powder

½ tsp baking soda

2 ½ tsp ground cinnamon

3 tsp ground ginger

½ tsp ground cloves

1 ½ tsp allspice

¼ tsp salt

½ cup milk

1/3 cup molasses

½ cup California Olive Ranch Olive Oil

1 tsp vanilla

2 eggs

½ cup light brown sugar


Whipped cream:

1 cup heavy whipping cream

2 tbsp granulated sugar

1 tsp vanilla


  • Preheat the oven to 325 degrees and grease a 9×5 loaf pan with oil and a little flour.
  • In a large bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  • In a medium bowl, whisk the milk, California Olive Ranch Olive Oil, molasses, vanilla, sugar, and eggs together until all the eggs have been incorporated.
  • Combine the wet and the dry ingredients and mix until all the flour has been incorporated.
  • Pour the mixture into the loaf pan and bake for 45-50 minutes.
  • Make the whipped cream by whipping all the ingredients together with an electric mixer until soft peaks have formed.
  • Serve the loaf cake topped with whipped cream and cranberries. Enjoy!
