Preheat the oven to 325 degrees and grease a 9×5 loaf pan with oil and a little flour.
In a large bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
In a medium bowl, whisk the milk, California Olive Ranch Olive Oil, molasses, vanilla, sugar, and eggs together until all the eggs have been incorporated.
Combine the wet and the dry ingredients and mix until all the flour has been incorporated.
Pour the mixture into the loaf pan and bake for 45-50 minutes.
Make the whipped cream by whipping all the ingredients together with an electric mixer until soft peaks have formed.
Serve the loaf cake topped with whipped cream and cranberries. Enjoy!
